Unlike other gelling agents, Metilgel acts on contact with heat. If kept cold, it acts as a thickener.
- Methylcelluloses’ viscosity can vary significantly, which has an effect on how products ultimately gel together.
- Use to create warm foams, gnocchi, noodles and more.
- For optimal use, hydrate while cold until the mixture reaches 40°F (4°C) and apply heat.
- The recommended dose for gelling (while hot) and thickening (cold) is 20g per kg.
