Increases Fat Melting Point.
An emulsifier derived from fats that increases the melting point of fats and creates more or less solid textures with them.
- Dissolves in hot, from 60°C, and acts when cold.
- Always apply in a fatty medium (liposoluble).
- Use for pralines or texturized oils/dried fruit butters.
- Suggested Dosage: 30-60g/kg.
- Size: 400g.
