Used in a variety of Japanese dishes.
Made from short-grain rice that has been inoculated with a fermentation culture called Aspergillus oryzae. The koji mold breaks down the rice starches into sugars and amino acids, which gives koji its characteristic sweet, nutty flavor and umami taste.
- Can be used for miso paste, sake, mirin, amazake and more.
