Apple cider vinegar has gone from something you might occasionally reach for when making a dressing to one of the most talked-about ingredients in the wellness world. Search for the benefits of apple cider vinegar and you’ll find it linked with everything from gut health and blood sugar to weight loss and morning routines.

But beyond the wellness conversation, there’s plenty to appreciate about a really good apple cider vinegar.

A quality apple cider vinegar is first and foremost a fantastic ingredient. What is Willy’s Apple Cider Vinegar?

Willy’s is a British apple cider vinegar producer based on a regenerative farm in Herefordshire, where its organic apples are grown, fermented and bottled.

This isn’t simply apple-flavoured vinegar. Willy’s Original ACV is made from organic apples and naturally fermented into raw apple cider vinegar. It is left unfiltered and unpasteurised and contains the live Mother – the naturally occurring culture that develops during the fermentation process.

The apples themselves are a big part of the story. Willy’s grows more than 48 varieties across its old Herefordshire orchards, giving the vinegar a character that begins with the fruit rather than relying on added flavourings.

Even the leftover apple pulp has a purpose, being used in the farm’s anaerobic digester before eventually returning to the land as fertiliser.

It’s a very different proposition from an inexpensive, highly processed bottle of vinegar – and you can taste that difference.

What does ‘apple cider vinegar with the Mother’ actually mean?

If you’ve ever picked up a bottle of raw apple cider vinegar and noticed a little cloudiness or sediment, don’t be alarmed. That’s exactly what you would expect to see.

The Mother is a culture created naturally during vinegar fermentation and contains bacteria involved in converting alcohol into acetic acid. Raw, unfiltered apple cider vinegars retain this material rather than filtering it out to create a completely clear vinegar.

Willy’s keeps its ACV raw, unfiltered and unpasteurised, which is why the appearance can be different from conventional clear vinegars.

You’ll often see apple cider vinegar with the Mother marketed alongside claims about probiotics and gut health. Research into the specific health benefits of the Mother itself is still developing, so we wouldn’t suggest treating ACV as a cure-all. What we can say is that choosing a traditionally fermented, unpasteurised vinegar gives you the product in a less processed form.

And from a cook’s point of view, it tastes good, which is reason enough to keep a bottle in the cupboard.


Is Willy’s apple cider vinegar good for you?

This is probably the biggest question surrounding apple cider vinegar.

There has been genuine scientific research into vinegar and apple cider vinegar, particularly around blood glucose. Reviews of clinical studies have found evidence that ACV may have a modest beneficial effect on some measures of blood glucose, particularly in people with type 2 diabetes, although researchers also stress that the evidence is limited and further high-quality research is needed.

Claims that apple cider vinegar will automatically make you lose weight, ‘detox’ your body or transform your health are much harder to support.

So rather than thinking of Willy’s ACV as a supplement or quick fix, we prefer to look at it as a good-quality fermented food that can easily become part of a varied diet.

There’s another advantage to that approach: you actually get to enjoy it.

What happens if you take apple cider vinegar every day?

There isn’t one guaranteed result from drinking apple cider vinegar every day, and everybody responds differently.

Some research suggests regular vinegar consumption may have a modest effect on blood glucose control in certain groups, but it isn’t a replacement for a balanced diet, medication or medical advice.

Willy’s recommends a 25ml daily serving of its Original ACV, diluted before drinking. You certainly don’t have to drink it every morning to enjoy it, though. Adding ACV to salad dressing, soups, marinades and other foods is another easy way to incorporate vinegar into your diet.

Apple cider vinegar is highly acidic, so it shouldn’t be regularly drunk neat. Diluting it helps reduce direct exposure to your teeth and throat. Anyone taking medication – particularly medication affecting blood glucose or potassium – should speak to their GP, pharmacist or another qualified healthcare professional before making ACV a regular part of their routine.

In other words, keep it sensible. Apple cider vinegar can be part of your everyday diet without needing to become a wellness challenge.


How to take Willy’s apple cider vinegar

If you do want to try the classic Willy’s daily ACV routine, the brand recommends diluting 25ml rather than drinking the vinegar neat.

Try it stirred into water, or add lemon and a little honey for something softer. Willy’s Honey ACV is another good starting point if you find traditional apple cider vinegar a little sharp, as the honey rounds out some of the acidity.

But drinking ACV is only one option.

You can whisk it with extra virgin olive oil, mustard and honey for a quick vinaigrette, stir a splash through soup just before serving, use it in marinades, add it to homemade chutneys and pickles or use a little acidity to balance slow-cooked sauces.

Which Willy’s Apple Cider Vinegar should you choose?

Start here if you want the classic.

Willy’s Original ACV is made from organic apples, naturally fermented and left raw and unpasteurised with the live Mother.

It has that recognisable apple cider vinegar tang and is the most versatile bottle of the collection. Dilute it as a daily ACV drink, whisk it into vinaigrettes, add it to marinades or use a splash anywhere a dish needs acidity.

Come autumn, try stirring a little through lentil or bean soups just before serving. That final hit of acidity can make a slow-cooked dish taste noticeably brighter without simply adding more salt.

Willy’s Live Honey Apple Cider Vinegar

For something gentler, Willy’s combines its organic apple cider vinegar with honey.

The result still has the tang you expect from ACV, but with a softer sweetness that makes it particularly easy to use in dressings, drinks and glazes.

Try it with Dijon mustard and olive oil over a warm salad of roasted squash, toasted walnuts and goat’s cheese. It also works beautifully brushed over roasted carrots or parsnips, where the combination of sweetness and acidity feels particularly at home as the weather turns cooler.

Willy’s Live Fire Cider Apple Cider Vinegar

This is the bottle to reach for when you want more punch.

Willy’s Fire Cider combines organic apple cider vinegar with ginger, turmeric, garlic, chilli, onion, horseradish, black pepper and honey.

That makes it much more than a flavoured drinking vinegar. Think of it as a ready-made source of heat, acidity and spice.

Mix it with olive oil, garlic and herbs for a chicken marinade, splash a little over roasted squash or root vegetables, or use it to sharpen a rich casserole. We also like the idea of adding a dash to a Bloody Mary – alcoholic or otherwise – where the chilli, horseradish and vinegar make complete sense.

It’s probably the most autumnal bottle in the range.

Willy’s Live Eureka Turmeric Apple Cider Vinegar

Eureka combines Willy’s organic apple cider vinegar with honey, turmeric, Eureka lemon and black pepper.

It sits somewhere between sharp, citrusy and gently spiced, which makes it particularly useful if you want an ACV that can move easily between drinks and cooking.

Willy’s suggests diluting it as a daily drink, but in the kitchen it has plenty more to offer. Shake it with olive oil for a quick dressing, stir a little into hummus, or use it to finish a carrot, parsnip or squash soup.

Turmeric, lemon, black pepper and autumn vegetables are already natural partners, so this is one bottle we can see disappearing surprisingly quickly.

Willy’s Live Apple Balsamic Vinegar

This is where things get especially interesting.

Willy’s Apple Balsamic is made from organic apple cider vinegar and organic apple juice must before being rested in French oak casks.

The result is richer and naturally sweeter than the Original ACV, with apple fruitiness, gentle acidity and a rounded character from the oak.

Use it much as you would a good balsamic vinegar: drizzle it over tomatoes, pair it with extra virgin olive oil and sourdough, use it as a glaze for roasted vegetables or add a few drops to fruit.

For autumn, try it over roasted figs, pears or squash, with a salty cheese alongside. It’s also an excellent finishing vinegar for pork dishes, where apple and acidity are already a classic combination.

Our favourite way to use ACV this autumn

Forget forcing yourself to knock back a neat shot of vinegar every morning.

Put a bottle next to your olive oil and start cooking with it.

Whisk Honey ACV into a mustard dressing for warm roasted vegetables. Splash Fire Cider over squash as it comes out of the oven. Stir Eureka Turmeric ACV into carrot and ginger soup. Use Original ACV to sharpen a slow-cooked bean stew. Finish roasted pears with a few drops of Apple Balsamic.

Once you start treating apple cider vinegar as an ingredient rather than simply a wellness product, it becomes much easier to understand why a really good bottle is worth having around.
