Live Apple Cider Vinegar

Willy’s Live Original Apple Cider Vinegar 500ml is a raw, unpasteurised apple cider vinegar made from 100% organic apples and naturally fermented with the live Mother. Produced in small batches on a 300-year-old organic farm in Herefordshire, it has a bold, tangy apple flavour with the slightly earthy character you expect from traditionally fermented ACV.

This organic apple cider vinegar is just as useful in the kitchen as it is diluted as a daily drink. Its bright acidity cuts through rich flavours beautifully, making it particularly good for salad dressings, marinades, sauces, soups and roasted vegetables. For a simple apple cider vinegar drink, Willy’s recommends diluting 25ml in water, or combining it with warm water, lemon and honey.

  • Whisk apple cider vinegar with extra virgin olive oil, Dijon mustard and honey for a punchy vinaigrette to spoon over leafy salads, roasted squash or grain bowls.
  • Make a sticky apple cider glaze for pork by reducing the vinegar with apple juice, honey and wholegrain mustard, then brushing it over the meat as it cooks.
  • Toss finely shredded red cabbage and carrots with apple cider vinegar, sea salt and a little sugar for a quick, crunchy slaw to serve with burgers or pulled pork.
  • Make quick-pickled red onions by combining thinly sliced onions with apple cider vinegar, sugar and spices for a sharp topping for tacos, salads and sandwiches.

What is ‘the Mother’ in apple cider vinegar?

The Mother is a naturally occurring collection of bacteria and yeast formed during fermentation. It can give raw apple cider vinegar a cloudy appearance or create visible strands and sediment in the bottle, all of which are a normal part of traditionally fermented vinegar.

Why does raw apple cider vinegar look cloudy?

Unlike filtered, pasteurised vinegar, raw apple cider vinegar retains material created during the fermentation process. This means its appearance can vary between bottles and it may become cloudier or develop sediment over time.

How much apple cider vinegar should you dilute in a drink?

Willy’s suggests a 25ml serving diluted before drinking, which can be mixed into a smoothie or combined with warm water, lemon and honey. Apple cider vinegar is highly acidic, so it should be diluted rather than drunk neat.
