Packed with gherkins and balanced with dill, mustard seed, garlic and Halen Môn Pure Sea Salt PDO, it brings together the sharp, tangy flavour of classic pickles in a smooth relish that works across far more than burgers and hot dogs.
The flavour is bright and punchy, with the familiar vinegary bite of gherkins softened by subtle sweetness and fresh dill notes. At i4C, we love the way this sort of relish can quietly change everyday dishes. One of our favourite combinations is stirring a spoonful through warm crushed new potatoes with crème fraîche and plenty of chopped parsley and dill.
It works brilliantly with smoked salmon blinis, ploughman's platters, sandwiches and cheese boards, but there is plenty of room to experiment. Stir it through mayonnaise for a quick burger sauce, add it to yoghurt alongside spiced roasted vegetables, or mix it into mashed potato with smoked haddock and peas before shaping into fish cakes.
