Recipe Inspiration:

  • Create a rich chicken tikka masala by building the sauce with cumin, coriander, turmeric and finishing with Garam Masala just before serving.
  • Make a comforting lentil dal by gently frying mustard seeds and cumin before adding turmeric, tomatoes and red lentils for a deeply satisfying meal.
  • Roast cauliflower with turmeric, chilli powder and cumin, then serve with cooling yoghurt and fresh coriander for a simple side dish.
  • Prepare fragrant pilau rice by gently cooking cardamom pods, cassia bark and cloves with basmati rice to accompany your favourite curry.

Why is Garam Masala usually added towards the end of cooking?

Garam Masala contains aromatic spices that retain their fragrance best when stirred into a dish during the final few minutes of cooking, giving curries a fresher, more rounded flavour.

What is the benefit of cooking with whole spices such as cumin seeds, cardamom and cloves?

Whole spices release their essential oils gradually as they are gently toasted in oil or ghee, creating a deeper, more complex base for curries, rice dishes and soups before other ingredients are added.

Why do traditional Indian recipes use several different spices together?

Each spice contributes something different, from warmth and sweetness to citrus notes or gentle heat. Layering them throughout the cooking process creates the balanced, complex flavours that are characteristic of Indian cuisine.
