Dried Lavender

Eco-Pebble Lavender Flowers 100g are dried lavender flowers with an unmistakable floral fragrance and gently aromatic flavour. Used carefully, culinary lavender brings a delicate botanical note to baking, desserts, drinks and infusions, pairing particularly well with lemon, honey, vanilla, berries and white chocolate.

The dried flowers can be infused into cream, milk and sugar syrup, incorporated sparingly into biscuits and cakes, or used to add a floral character to cocktails, lemonade and afternoon tea bakes. Lavender has a naturally pronounced flavour, so a small amount is usually all that's needed.

Key Features:

  • Dried lavender flowers.
  • Supplied in a generous 100g pack.
  • Distinctive floral fragrance and aromatic character.
  • Suitable for culinary infusions, baking and drinks.
  • Can be used whole, crushed or infused and strained.
  • Strong natural flavour means only a small quantity is needed in most recipes.

Recipe Inspiration:

  • Infuse lavender flowers into warm double cream, strain and use the flavoured cream to make a lavender and honey panna cotta.
  • Add a small amount of finely crushed lavender to shortbread dough with fresh lemon zest for fragrant lavender and lemon biscuits.
  • Make a lavender sugar syrup and combine it with lemon juice, sparkling water and plenty of ice for a floral homemade lemonade.
  • Infuse lavender into a vanilla custard base before churning into ice cream, then serve with fresh or roasted peaches and a drizzle of honey.

How much dried lavender should I use in baking?

Lavender has a powerful flavour, so it is best used sparingly. Many recipes only require around one to two teaspoons for an entire batch of biscuits or cake, although the exact quantity will depend on the recipe and desired intensity.

What flavours pair particularly well with lavender?

Lavender works especially well with lemon, honey, vanilla, raspberry, blueberry, peach and apricot. For richer desserts, it can also be paired with white chocolate, cream and buttery pastry.

Can you make lavender sugar with dried lavender flowers?

Yes. Dried lavender can be combined with granulated or caster sugar and left to infuse its fragrance into the sugar. Lavender sugar can then be used in shortbread, cakes and scones or sprinkled over fruit and desserts.
