Helps to break down plant cell walls.
It degrades cellulose present in fruits and other plant parts in a way that clarifies juices and peels, liquefies and softens uncooked parts of fruits and vegetables, maintaining the fresh taste.
- Can degrade cellulose in plant foods, improve the nutritional value of foods and allow digestion of some of the fiber present in the food.
- Cellulase only acts on cellulose: it will only work on products containing cellulose.
- Apply in powder form on top of the product, impregnate in vacuum or inject with a syringe.
- Dilute 0.1-5% of Celluläse in water or in the product itself.
