Fillo Pastry
Theos Frozen Fillo Pastry is a pack of delicate paper thin pastry sheets traditionally used in Mediterranean and Middle Eastern cooking. Known for its light texture and crisp finish once baked, fillo pastry is the key ingredient in many classic dishes where layers of pastry create a beautifully flaky result.
Each sheet of fillo pastry is rolled extremely thin, allowing cooks to layer it with butter or oil to build crisp golden textures in both sweet and savoury recipes. When baked, the pastry becomes light and crunchy, creating the signature layers found in dishes such as baklava, spanakopita and savoury pies.
Because the pastry sheets are frozen, they are convenient to store and easy to keep on hand for cooking projects or entertaining. Once thawed, the flexible sheets can be folded, layered or rolled around fillings, making them ideal for everything from traditional pastries to modern appetisers.

What is the difference between fillo pastry and puff pastry?
Fillo pastry is made from very thin sheets of dough that are layered with oil or butter before baking, creating a crisp flaky texture. Puff pastry contains butter within the dough layers and rises more during baking.
How do you stop fillo pastry from drying out?
Fillo pastry dries quickly once exposed to air. When working with the sheets it helps to cover unused pastry with a clean slightly damp cloth while you assemble your recipe.
Do you need to cook fillo pastry before filling it?
Fillo pastry is usually layered or wrapped around fillings before baking. The pastry cooks and crisps in the oven while the filling heats through, creating the finished dish.
