Suma Vital Wheat Gluten 500g is a high-protein wheat ingredient used to improve the structure, elasticity and rise of homemade bread, as well as being the key ingredient for making seitan. When added to bread flour, vital wheat gluten strengthens the dough, helping it hold onto the gases produced during proving for a lighter, better-structured loaf with a satisfyingly chewy texture.
It is particularly useful for bread recipes where you want extra strength and elasticity, including sourdough, wholemeal bread, seeded loaves, bagels and pizza dough. Simply add around one tablespoon of vital wheat gluten per cup of flour in your recipe.
Vital wheat gluten can also be transformed into homemade seitan, a firm and versatile meat alternative that readily takes on the flavours of stocks, marinades, herbs and spices.

What is vital wheat gluten made from?
Vital wheat gluten is produced from wheat flour by hydrating it to activate the gluten and then separating much of the starch. The remaining gluten is dried and milled into a concentrated powder that becomes elastic again when mixed with liquid.
Why is vital wheat gluten useful in wholemeal bread?
Wholemeal flour contains bran and other components of the wheat grain that can interfere with gluten development. Adding vital wheat gluten can strengthen the dough's gluten network, helping it retain gas more effectively as the bread proves.
Is vital wheat gluten the same as bread flour?
No. Bread flour is flour with a relatively high protein content, whereas vital wheat gluten is concentrated gluten that can be added to flour or used as an ingredient in its own right. Only a relatively small quantity is normally needed when strengthening bread dough.
