Coronation Sauce

Stokes Coronation Sauce 2kg is a deliciously creamy, fruity and gently spiced sauce inspired by the classic British coronation chicken recipe. Made with a rich mayonnaise base, sweet apricots, juicy sultanas and aromatic curry spices, it delivers that unmistakable balance of sweetness, warmth and savoury flavour that makes coronation chicken such a favourite.

With 17% apricots, 3% sultanas and a carefully balanced blend of spices, this premium coronation sauce has a smooth, creamy texture with little bursts of fruit throughout. It's perfect for mixing with cooked chicken to create a traditional coronation chicken filling for sandwiches, wraps, jacket potatoes and salads. It also works beautifully as a dressing for cold pasta salads or as a fruity curry dip for sharing platters.

At i4C, we're particularly fond of Stokes Coronation Sauce for making a really good coronation chicken sandwich. Pile it generously onto fresh bread with tender chicken and crisp lettuce, and you've got a proper lunchtime favourite. The generous 2kg catering tub makes it a practical choice for cafés, sandwich shops, restaurants and busy kitchens preparing larger quantities.

Why is coronation chicken called coronation chicken?

Coronation chicken was originally created for the coronation of Queen Elizabeth II in 1953. The dish, known as Poulet Reine Elizabeth, was developed by Rosemary Hume and Constance Spry and featured cold chicken served with a delicately spiced, creamy sauce. It became a British classic and remains a popular sandwich and salad filling today.

How much coronation sauce should I use per kilogram of chicken?

For a traditional coronation chicken filling, start with approximately 300–400g of Stokes Coronation Sauce per kilogram of cooked, shredded chicken. This gives a creamy coating without overwhelming the meat. You can adjust the quantity depending on whether you prefer a lightly dressed filling or a richer, more generously sauced mixture.

How many portions of coronation chicken can I make with a 2kg tub?

A 2kg tub can make approximately 50–66 portions when using 30–40g of sauce per serving. This makes it particularly useful for preparing sandwich fillings, salads and buffet dishes in larger quantities. The exact yield will depend on your portion sizes and how generously you dress the chicken.
