Roasted Sweet Potatoes with Miso'grette Recipe

Ingredients
- 4 medium sweet potatoes, halved lengthways
- 2 tbsp olive oil
- ½ tsp flaky sea salt
- ½ tsp black pepper
- 3 spring onions, finely sliced
- 1 tbsp sesame seeds
- 3–5 tbsp miso'grette dressing
Method
- Preheat the oven to 220°C (200°C fan).
- Score the cut side of each sweet potato in a crosshatch pattern, cutting roughly 1cm deep. This helps the heat penetrate and allows the dressing to soak into the potatoes after roasting.
