Reggia Pasta Fettuccine 500g is a classic Italian-style ribbon pasta with long, flat strands that are perfect for catching rich, creamy sauces. Wider than spaghetti but narrower than tagliatelle, fettuccine has a satisfying bite and generous surface area, allowing sauces to cling beautifully to every strand.

A brilliant pasta to keep in the cupboard, Reggia Fettuccine works particularly well with creamy mushroom sauces, slow-cooked ragù, tomato sauces and simple combinations of butter, Parmesan and herbs. Its broad ribbons also stand up well to substantial ingredients such as chicken, pancetta, mushrooms and roasted vegetables.

Why are flat pasta shapes good with creamy sauces?

The broad surface of ribbon pasta provides plenty of space for creamy sauces to cling to, helping distribute the sauce throughout the dish rather than leaving it behind in the bowl.

Should you keep some pasta cooking water when making fettuccine?

Yes. Before draining the pasta, scoop out some of the starchy cooking water. Adding a splash while tossing the fettuccine with its sauce can help loosen the sauce and create a smoother consistency that coats the pasta more evenly.

Should fettuccine be rinsed after cooking?

Generally, no. Rinsing removes surface starch that helps pasta sauce adhere to the strands. Drain the fettuccine and transfer it directly to the sauce, ideally finishing the pasta and sauce together in the pan.
