Wholegrain Mustard

There's wholegrain mustard, and then there's Pommery Moutarde de Meaux. Made using a traditional French recipe passed down through generations, Pommery Wholegrain Mustard 100g is a beautifully rustic mustard with a rich, nutty flavour, gentle acidity and a satisfying texture from its coarsely ground mustard seeds.

Originating from the historic town of Meaux, near Paris, this traditional French wholegrain mustard has a distinctive character that sets it apart from smoother Dijon varieties. Its generous mustard seeds give it a lovely bite, while the carefully balanced blend of vinegar and spices creates a rounded flavour that complements everything from roast beef and pork to chicken, sausages and charcuterie.

It's particularly delicious stirred into creamy mustard sauces, whisked into homemade salad dressings or spread onto a ham and cheese sandwich. Try combining it with honey for a sticky glaze on roast gammon, mixing it into mashed potatoes or adding a spoonful to a rich beef casserole. Its coarse texture also makes it a lovely addition to cheese boards and ploughman's lunches.

Why does traditional Moutarde de Meaux have such a distinctive texture?

Unlike finely ground mustards, traditional Moutarde de Meaux retains pieces of mustard seed during preparation. This creates its characteristic coarse consistency, with visible grains that provide texture and release flavour as you eat. The balance of whole and crushed seeds is an important part of the mustard's traditional character.

Does wholegrain mustard become milder when cooked?

Yes, heating wholegrain mustard can soften some of its sharper notes, allowing its nuttier, savoury characteristics to become more noticeable. In slow-cooked dishes, the mustard flavour gradually blends with the other ingredients. For a more pronounced mustard taste, try adding a small extra spoonful towards the end of cooking.

Why is Moutarde de Meaux associated with the town of Meaux in France?

Meaux, in the Île-de-France region, has a long history of mustard production. Moutarde de Meaux became particularly well known for its traditional coarse-ground preparation and distinctive flavour. Pommery helped preserve and popularise this regional mustard-making tradition, making it one of the best-known French wholegrain mustards.
