Why are golden raisins a different colour to regular raisins?

Golden raisins are typically dried under controlled conditions rather than being naturally sun-dried in the same way as many darker raisins. The different processing method helps preserve their characteristic light golden colour and contributes to their distinctively bright, fruity character.

Should you soak golden raisins before baking?

It depends on the recipe. Golden raisins can be added directly to many cakes, biscuits and breads, but soaking them first can make them noticeably plumper. Water, fruit juice or tea can all be used, while recipes such as Christmas cakes and enriched fruit breads may call for a particular soaking liquid.

How can you stop golden raisins sinking to the bottom of a cake?

For thicker cake batters, raisins should usually remain reasonably well suspended. With looser mixtures, lightly coating the raisins with a small amount of the flour measured for the recipe can help them distribute more evenly. Avoid adding additional flour solely for coating, as this can alter the balance of the recipe.
