Sardinian Crispbread

Giulio Bulloni Music Bread 500g is a traditional Sardinian flatbread known for its exceptionally thin, crisp texture and delicate savoury flavour. Also known as pane carasau or carta da musica, meaning “music paper”, this distinctive Italian bread is baked into wafer-thin sheets that deliver a wonderfully light crunch.

Made with durum wheat flour and enriched with extra virgin olive oil, Music Bread is incredibly versatile. Break the crisp sheets into pieces for antipasti and grazing boards, serve alongside dips and cheeses, or use them as an alternative to crackers with cured meats and olives. They can also become part of the dish itself, layered with sauces and other ingredients for traditional Sardinian-inspired recipes.

Why is pane carasau called Music Bread?

Its nickname comes from the Italian “carta da musica”, or music paper. The name refers to the bread’s exceptionally thin, paper-like sheets and characteristically crisp texture.

Where does Music Bread originate?

Pane carasau originates from Sardinia, Italy, where it has been made for centuries. Its thin, twice-baked style traditionally produced a bread that could be kept for long periods, making it particularly practical for Sardinian shepherds spending extended periods away from home.

What is pane frattau?

Pane frattau is a traditional Sardinian dish that transforms crisp pane carasau into a more substantial meal. The bread is softened and layered with tomato sauce and Pecorino cheese, traditionally with a poached egg served on top.
