Halloumi Cheese

Yamas Halloumi Cheese 250g is a firm, salty cheese with that unmistakable squeaky texture and one particularly useful quality: it holds its shape beautifully when cooked. Slice it into thick pieces and fry, grill or barbecue until the outside develops a deep golden crust while the centre becomes warm and satisfyingly tender.

Halloumi is incredibly versatile beyond the familiar grilled slices. Cube it for salads and grain bowls, thread it onto skewers, tuck it into wraps or burgers, or pair it with contrasting sweet ingredients such as honey, watermelon, figs and pomegranate. Its salty flavour also works brilliantly with Mediterranean ingredients including olives, tomatoes, aubergines, courgettes and fresh herbs.

Why doesn't halloumi melt like many other cheeses?

Halloumi has a firm protein structure that allows it to withstand relatively high cooking temperatures without melting into a liquid. Instead, the exterior browns while the cheese largely maintains its shape.

How do you get a golden crust on halloumi?

Start with a hot frying pan and give each slice enough room to make good contact with the surface. Avoid moving the halloumi constantly; leaving it undisturbed briefly allows a proper golden crust to develop before turning.

Why is halloumi sometimes soaked in water before cooking?

Halloumi can have a pronounced salty character from its brine. Some people soak or rinse it briefly before cooking to soften the saltiness, particularly when it is being paired with other strongly seasoned ingredients.
