Vegetarian Cheese
This Vegetarian Italian Hard Cheese is a versatile, full-flavoured cheese with the firm texture and savoury character that works so well across classic Italian-inspired cooking. It can be finely grated, shaved or incorporated into sauces, making it a useful choice when you want the familiar qualities of an Italian-style hard cheese made with a vegetarian-friendly alternative to traditional animal rennet.
Grate generously over pasta, risotto and gnocchi, shave onto salads or use it to add depth to soups, sauces and savoury bakes. The generous 2kg format is particularly handy when hard cheese is something you use regularly rather than occasionally.

Why are some Italian hard cheeses not vegetarian?
Many traditional hard cheeses are produced using animal rennet, an enzyme used during cheesemaking to coagulate the milk. Vegetarian versions use an alternative coagulant, allowing a similar style of hard cheese to be produced without animal rennet.
What is the best way to grate hard cheese?
A fine grater or Microplane produces light, fine shavings that melt particularly well into pasta and risotto. A coarser grater creates more substantial pieces that work well for gratins, baked pasta and toppings.
Can the rind of Italian-style hard cheese be used in cooking?
When you reach the end of a suitable hard cheese, the rind can sometimes be added to slowly simmered soups, broths and sauces to contribute extra savoury depth before being removed prior to serving. Check the specific product packaging to ensure its rind is suitable for this use.
