Bincho Charcoal
Sumi Bincho Charcoal is a premium high-density charcoal designed for powerful, consistent grilling with minimal smoke and clean heat. Inspired by traditional Japanese Binchō-tan charcoal, this square-shaped hardwood charcoal burns hotter and significantly longer than standard lumpwood charcoal, making it ideal for Konro grills, ceramic barbecues, yakitori grills, hibachi cooking, and outdoor charcoal cooking setups.
Produced using traditional-style methods and dense hardwoods, Sumi Bincho Charcoal delivers steady radiant heat with very little flare-up, helping ingredients cook evenly while retaining their natural flavour. Unlike many standard charcoals, it produces very little smoke and minimal flavour tainting, making it especially popular for cooking premium meats, seafood, yakitori skewers, vegetables, and delicate ingredients where clean charcoal flavour matters.
Its long burn time of at least five hours makes it highly efficient for extended barbecue sessions, live-fire cooking, restaurant service, and low-interruption grilling. The charcoal also produces a distinctive metallic sound when struck together, a characteristic associated with dense Japanese-style white charcoal.
Suitable for use in Konro grills, kamado grills, hibachi barbecues, and traditional charcoal barbecues, Sumi Bincho pairs particularly well with ingredients such as wagyu beef, yakitori sauces, seafood, miso marinades, Japanese seasoning, skewers, robata-style cooking, and cast iron grilling equipment.

Why does Binchotan charcoal burn longer than standard charcoal?
Binchotan-style charcoal is made from extremely dense hardwoods and carbonised using specialised production methods. This creates a harder charcoal with a higher carbon content, allowing it to burn steadily for much longer than ordinary lumpwood charcoal.
What makes Binchotan charcoal popular for Japanese grilling?
Its clean-burning properties and stable high heat make it ideal for cooking delicate ingredients such as seafood, yakitori, and thin cuts of meat without overpowering their flavour with heavy smoke.
Can Binchotan charcoal be reused?
Yes, unused pieces can often be reused after cooking. Once extinguished safely in water and fully dried, many pieces retain enough density and structure for future grilling sessions.
