Thickening agent, emulsifier and suspensor, which can be used in both cold and hot liquid products.
- Ideal for sauces, soups, vinaigrettes, cream, ice cream, confectionery and more!
- Heat resistant, allows freezing, thermo irreversible.
- For best results use a stick blender to incorporate.
- Remove any excess air with a vacuum pack machine.
- Size: 500g.

Recipe - Coloured Vinaigrette
Ingredients:
- 250g Modena vinegar
- 250g Raspberry puree
- 2g Gelespessa
- As needed - Salt, Pepper and olive oil
Method:
- Combine vinegar and 2g of Gelespessa, then mix with a hand blender until thick
- After that, do the same with the Raspberry puree
- Finally, mix olive oil and the previous mixtures in order to achieve a colourful vinaigrette
