Recipe - Coloured Vinaigrette
- 250g Modena vinegar
- 250g Raspberry puree
- 2g Gelespessa
- As needed - Salt, Pepper & Olive oil
- Combine vinegar and 2g of Gelespessa, then mix with a hand blender until thick
- After that, do the same with the Raspberry puree
- Finally, mix olive oil and the previous mixtures in order to achieve a colourful vinaigrette
