Agar Agar

Sosa Agar Agar is a powdered gelling agent made from seaweed, used when you want clean flavour and a firm set. It has a neutral taste, so it is ideal for clear jellies, fruit gels, jam style sets and neat dessert components where you want the main ingredients to come through. It gives a more rigid gel than gelatine, which makes it especially useful for slicing, dicing and shaping.

  • 500g pack size.
  • Recommended dosage range is 2 to 15g per kg depending on the set you want.
  • Designed for aqueous liquids and activated by heating to around 90 °C.
  • Thermoreversible, so it can be reheated and reset.
  • Not freezable.

  • Clear fruit jelly cubes for a trifle style dessert with custard and sponge.
  • Coffee jelly squares served with lightly sweetened whipped cream.
  • Tomato and herb aspic to serve with prawns or poached fish for a retro starter done properly.
  • Fruit juice caviar pearls to spoon over sorbet, cheesecake or a set yoghurt dessert.

Why did my agar agar set turn out grainy or lumpy?

This usually happens when the powder hydrates unevenly. The simplest fix is to whisk it thoroughly into the liquid before it fully heats, then keep stirring as it comes up to temperature so it dissolves completely.

Does agar agar work with very acidic fruits like lemon or pineapple?

It can, but strong acidity can weaken the final set. A practical approach is to gel a less acidic base first and then add sharp fruit as a layer, or adjust the recipe so the acidic element is diluted rather than being the whole liquid.

How do you get a clearer agar gel?

Clarity comes from your liquid and your handling. Use a clear juice or well strained infusion, avoid aerating it when whisking, and let it cool undisturbed so bubbles rise and the gel sets cleanly.
