  • Either re-hydrate in hot water before using, or for cooked dishes add them near the start of the recipe.
  • Ensure mushrooms are soaked for approximatley 30 minutes in warm water prior to use.
  • The soaking liquor can be passed through muslin and used to enhance the flavour of stocks and sauces.
