Kashmiri Chilli Powder

Fox’s Spices Kashmiri Chilli Powder 600g is a beautifully vibrant ground chilli powder, prized for its deep red colour, gentle warmth and rich, rounded flavour. A favourite in Indian cooking, Kashmiri chilli powder brings an appetising colour and subtle chilli heat to curries, marinades, sauces and spice blends without overpowering the other ingredients.

Unlike hotter varieties of ground chilli, Kashmiri chilli powder is particularly valued for its balance of colour and flavour. Its mild to moderate heat and slightly fruity, earthy character make it ideal for dishes such as butter chicken, chicken tikka masala, rogan josh and tandoori chicken. It also works wonderfully in homemade curry pastes, where it combines with spices such as cumin, coriander, turmeric and garam masala.

One of the best things about Kashmiri chilli powder is the beautiful red colour it brings to food. Stir it into yoghurt marinades for tandoori-style dishes, bloom it gently in oil or ghee to release its flavour, or add it to slow-cooked tomato sauces for a rich, warming finish. Beyond Indian recipes, it's also a lovely addition to roasted vegetables, spiced chickpeas and homemade seasoning rubs.

What is the difference between Kashmiri chilli powder and regular chilli powder?

Kashmiri chilli powder is generally milder and particularly prized for its vibrant red colour. Regular chilli powder can vary considerably in heat and may refer either to pure ground chillies or a blended seasoning, depending on the product. Kashmiri chilli is a good choice when you want plenty of colour and chilli flavour without making a dish excessively hot.

Why is Kashmiri chilli powder used in tandoori marinades?

Kashmiri chilli powder is traditionally used in tandoori cooking because it contributes a distinctive red colour and gentle chilli warmth. When mixed with yoghurt, ginger, garlic and other spices, it helps create the familiar appearance and flavour associated with tandoori dishes. The final colour will also depend on the other ingredients and cooking method.

Should Kashmiri chilli powder be added at the beginning or end of cooking?

For curries and sauces, Kashmiri chilli powder is often added during the early stages of cooking alongside other ground spices. Briefly cooking it in oil or ghee helps release its flavour and distribute its colour throughout the dish. Keep the heat moderate and avoid frying the powder for too long, as ground chilli can burn and develop a bitter taste.
