Pickling Vinegar

Drivers Pickling Vinegar 1L is a ready-spiced malt vinegar that takes the extra work out of making homemade pickles and preserves. With its distinctive balance of sharp acidity, gentle sweetness and warming spice, it is ready to pour straight over prepared vegetables without having to build your own pickling vinegar from scratch.

With a minimum acidity of 5%, this malt pickling vinegar is particularly handy for traditional pickled onions, shallots, beetroot, red cabbage and cucumbers. Its malty character also works brilliantly for quick pickles, chutneys and relishes, bringing that familiar British chip-shop-style tang alongside the spices already infused into the vinegar.

Key Features:

  • 1 litre bottle.
  • Produced by Drivers.
  • Minimum acidity of 5% as acetic acid.
  • Ready-spiced formula removes the need to add a separate pickling spice blend.
  • Generous format suited to batch pickling and preserving.
  • A convenient choice for traditional British pickles, chutneys and relishes.

Recipe Inspiration:

  • Make classic pickled shallots by packing peeled shallots into sterilised jars and covering them with Drivers Pickling Vinegar for a sharp, spiced accompaniment to cheese and cold meats.
  • Prepare pickled red cabbage to serve alongside burgers, pulled pork or rich winter dishes for a crunchy hit of acidity.
  • Turn seasonal beetroot into spiced pickled beetroot and serve it with goat’s cheese, walnuts and peppery salad leaves.
  • Make a homemade piccalilli with cauliflower, cucumber and onions for a punchy condiment to serve with pork pies, sandwiches and a ploughman’s lunch.

Why does pickling vinegar need a good level of acidity?

Acidity is fundamental to vinegar pickling because it creates the characteristically sharp environment associated with preserved vegetables. For recipes intended for longer-term preservation, always follow a tested recipe with the specified vinegar strength, quantities and processing method rather than altering the vinegar-to-water ratio.

Should pickling vinegar be boiled before pouring it over vegetables?

It depends on the recipe. Some traditional recipes call for the vinegar to be heated before it is added, while others use it differently to preserve particular textures. Following the method given in a reliable pickling recipe will produce the most consistent result.

Which vegetables are particularly good for vinegar pickling?

Firm vegetables generally respond very well to pickling. Beyond traditional onions and beetroot, try cauliflower, carrots, radishes, green beans and chillies, choosing a tested recipe appropriate for the vegetable and type of preserve you are making.
