Creamy Gochujang Pasta Recipe

Ingredients
- 400g spaghetti, linguine or your favourite pasta
- 30g unsalted butter
- 3 garlic cloves, finely chopped
- 2–3 tbsp gochujang paste
- 200ml double cream
- 60g Parmesan, finely grated, plus extra to serve
- 100–150ml reserved pasta water
- 2 spring onions, finely sliced
- 1 tsp sesame seeds
- Freshly cracked black pepper
Method
- Bring a large pan of generously salted water to the boil. Add the pasta and cook according to the packet instructions until al dente.
- Before draining, scoop out a mugful of the starchy pasta cooking water. Drain the pasta and set aside.
- While the pasta cooks, melt the butter in a large frying pan over a medium-low heat. Add the garlic and cook for around 30 seconds until fragrant, taking care not to let it brown.
- Add 2 tablespoons of gochujang and cook for another minute, stirring it through the butter. Cooking the paste briefly helps develop its rich, savoury flavour.
- Pour in the double cream and stir until the gochujang has completely incorporated. Bring to a gentle simmer and cook for 1–2 minutes.
- Reduce the heat and add the grated Parmesan, stirring until melted into the sauce.
- Add the drained pasta directly to the pan along with around 100ml of the reserved pasta water. Toss everything together vigorously until the sauce becomes glossy and coats the pasta. Add a little more pasta water if needed.
- Taste and add the remaining gochujang if you would like more heat. Finish with plenty of freshly cracked black pepper.
- Divide between bowls and scatter over the sliced spring onions, sesame seeds and a little extra Parmesan. Serve immediately.
