Bulgar Wheat

Centaur Bulgar Wheat 1kg is a versatile wholegrain ingredient with a gently nutty flavour and satisfyingly light, slightly chewy texture. Made from wheat that has been parboiled, dried and cracked, bulgar wheat cooks relatively quickly and readily absorbs the flavours of herbs, spices, dressings and stocks.

Best known as the grain traditionally used in tabbouleh, bulgar wheat can also form the base of warm grain bowls, salads, stuffed vegetables and pilafs. Try it with roasted Mediterranean vegetables and feta, combine with parsley, mint, tomato and lemon, or serve alongside grilled meats, falafel and Middle Eastern dishes as an alternative to rice or couscous.

Recipe Inspiration:

  • Make a classic tabbouleh by combining cooked bulgar wheat with plenty of chopped parsley, mint, tomatoes, spring onions, lemon juice and extra virgin olive oil.
  • Toss bulgar wheat with roasted aubergine, courgette and peppers, then finish with feta, herbs and a lemon dressing for a colourful grain salad.
  • Cook the bulgar wheat in vegetable or chicken stock with cumin and warm spices, then serve as a simple pilaf alongside grilled chicken or lamb.
  • Mix cooked bulgar wheat with herbs, spices and finely chopped vegetables to create a filling for roasted peppers, courgettes or aubergines.

What is the difference between bulgar wheat and couscous?

Bulgar wheat is made from whole wheat grains that are parboiled, dried and cracked, whereas couscous is made from semolina formed into tiny granules. This gives bulgar wheat a nuttier flavour and more substantial, chewy texture.

Does bulgar wheat need to be soaked before cooking?

Preparation depends on the coarseness of the grain. Fine bulgar can often be softened simply by soaking it in hot water, while coarser varieties usually benefit from simmering. Following the preparation instructions on the pack will give the best result.

What flavours go particularly well with bulgar wheat?

Bulgar wheat is especially good with Mediterranean and Middle Eastern flavours. Parsley, mint, coriander, lemon, pomegranate, tomato, roasted peppers, aubergine, cumin, sumac, feta and extra virgin olive oil all work particularly well with its nutty character.
