What is katsuobushi used for in Japanese cooking?

Katsuobushi is used to create dashi, the foundational stock for many Japanese soups and sauces. It is also commonly sprinkled on finished dishes to add savoury depth and aroma.

How are bonito flakes made?

Bonito flakes are produced by filleting, smoking, drying and fermenting skipjack tuna until it becomes extremely firm. The block is then shaved into thin flakes that release flavour quickly when heated.

Why do bonito flakes move when placed on hot food?

The flakes are extremely thin and react to rising steam and heat currents rather than actually “dancing”. This movement is a natural effect of the warmth lifting and curling the delicate shavings.
