Standard Bonito Flakes

Experience the heart of Japanese cuisine with Wadakyu Katsuobushi Bonito Flakes 500g, a premium pack of thinly sliced, dried skipjack tuna flakes. These flakes are meticulously crafted using traditional methods, resulting in a rich, smoky flavour brimming with umami, the fifth taste sensation.

  • They come from a tuna-like Pacific fish which is dried, fermented to wood-like hardness and then smoked.
  • Use along with dried kelp to form the base of the Japanese stock dashi.
  • Also use to garnish salads and light, Japanese dishes such as fried tofu or somen noodles.
  • Or gently heat with soy sauce, sesame seeds and a touch of honey to make okaka - a popular Japanese seasoning for onigiri rice balls.
  • Cooking instructions
    • First batch of stock:
    • Bring 1L water to the boil in a saucepan. Add 40gr fresh Katsuobushi to the boiling water.
    • Simmer for 1minute. Turn off the heat and wait for a few minutes until the Katsuobushi settle down inthe bottom of the saucepan. Drain Katsuobushi through a sieve.
    • You can wring out and reuse the Katsuobushi up to 24hours later to make a second batch of stock.
    • Store the used katsobushi in the fridge before making a second batch of stock.
    • Second batch of stock:
    • Simmer the Katsobushi used in the first batch with 500ml boiling water for 5minutes in a saucepan. Useless water for a stronger stock
