Or, make the most amazing tomato consomme as we do in ICE, guaranteed to work every time. Simply place the Big Tom juice into a pan, add 3 whisked egg whites, bring to boil and gently simmer for 10 min. Next strain through muslin and serve. No need for seasoning as its already perfect and can be made in advance, chilled and reheated as required.
