A glorious mixture of Shiitake, Oyster and Porcini mushrooms, dried to provide a more intense flavour than fresh mushrooms.
- Either re-hydrate in hot water before using, or for cooked dishes add them near the start of the recipe.
- Ensure mushrooms are soaked for approximatley 30 minutes in warm water prior to use.
- The soaking liquor can be passed through muslin and used to enhance the flavour of stocks and sauces.
