Agar Powder
Toufood Agar is a professional-grade agar powder designed for precise setting and reliable results in both hot and cold preparations. Derived from red seaweed, this neutral-tasting gelling agent creates firm, clean-set gels with a smooth finish and excellent stability.
Unlike traditional gelatine, agar sets at room temperature and remains stable even in warmer conditions, making it ideal for dishes that need to hold their shape during service. It activates when heated and sets as it cools, allowing for clear, defined textures in everything from delicate jellies to structured desserts.
Agar powder is also highly efficient, meaning only a small amount is needed to achieve a strong set. Whether used for layered desserts, fruit gels, or savoury presentations, it delivers consistent results with a crisp bite and professional finish.

How do you use agar powder correctly in recipes?
Agar must be fully dissolved by bringing it to a gentle boil in liquid, usually for 1–2 minutes, before it will activate properly. Simply stirring it into cold liquid will not produce a set.
Why is agar sometimes not setting as expected?
Acidic ingredients such as citrus or pineapple can weaken the setting power. Increasing the quantity slightly or adjusting the balance of the recipe helps achieve a firmer result.
Can agar be reheated after it has set?
Yes, agar gels can be reheated until they return to liquid form and then reset again as they cool, making it useful for adjustments or reshaping during preparation.
