Bergamot Essence

Sosa Aroma Natural Bergamot 50g is a concentrated natural bergamot flavouring that lets you bring that distinctive citrus perfume into your baking and desserts with just a few drops. The flavour is bright and aromatic with floral notes and a gentle bitterness, a little like a cross between lemon, orange and Earl Grey tea. Because it is a smooth liquid aroma rather than zest or peel, it blends cleanly into mixtures and gives a very even flavour from the first spoonful to the last.

This bergamot aroma is made to be used sparingly, so you can fine tune the intensity to suit each recipe. A small amount is enough to refresh a simple sponge, custard or cream, while a few extra drops give a stronger, more grown up citrus note in patisserie, ice creams and plated desserts. The glycerin base helps it mix easily into your preparations, so you can swirl it into creams, batters, gels and drinks without any gritty texture or visible bits of peel.

Key Features:

  • Water soluble citrus flavouring that stirs easily into batters, creams and drinks.
  • Designed for precise dosing at around zero point two grams per kilo which is usually a few drops.
  • Suitable for hot and cold preparations including desserts, patisserie, ice creams and cocktails.
  • Ideal for both professional style recipes and keen home bakers who want consistent bergamot flavour.
  • Size: 50g

Recipe Inspiration:

  • Bergamot and vanilla panna cotta: Stir a few drops of Sosa Aroma Natural Bergamot into warm cream sweetened with sugar and infused with vanilla. Set with gelatine in small glasses. The result is a softly set dessert with a gentle bergamot top note that works well after a rich main course.
  • Bergamot and white chocolate ganache: Warm cream and pour it over chopped white chocolate, then add a little bergamot aroma and stir until smooth. This ganache makes a fresh tasting filling for tarts, layered cakes or petits fours, and can also be whipped lightly to fill macarons.
  • Sparkling bergamot lemonade: Mix still or sparkling water with lemon juice and sugar to taste, then add a few drops of bergamot aroma and stir well. Serve over ice with a slice of lemon. The bergamot gives a more fragrant twist to homemade lemonade and works nicely as an alcohol free welcome drink.
  • Bergamot scented buttercream: Beat softened butter with icing sugar and a splash of milk until fluffy, then add bergamot aroma a drop at a time, tasting as you go. Use this buttercream to fill sponge cakes or cupcakes where you want a lighter alternative to classic lemon. It is especially good with poppy seed or almond sponges.

How does bergamot aroma differ from using fresh zest or juice in recipes?

Fresh zest and juice bring acidity and natural oils, but they can vary quite a lot from fruit to fruit. A concentrated bergamot aroma is designed to give you a stable flavour every time you bake, so your favourite recipes taste the same from one batch to the next. Because it does not add extra liquid or visible peel, it is useful in recipes where you want a very smooth finish such as macarons, fine sponges, gels or mirror glazes.

Can I use this bergamot aroma in chocolate work and high fat fillings?

This aroma has a glycerin base and is formulated to mix into both water based and high fat recipes, including ganaches, pralines and buttercreams. A helpful approach is to blend the drops into a small amount of warm cream or melted chocolate first, then fold that into the rest of your mixture. This gives an even distribution of flavour and avoids pockets of stronger taste in rich fillings.

How can I build flavour layers with bergamot without overpowering a dessert?

Bergamot partners well with flavours such as vanilla, almond, honey, stone fruits and dark chocolate, so you can use it as one part of a wider flavour picture. Many pastry chefs start with a very small amount in the main component, for example a cream or mousse, then reinforce the idea with a little in a glaze, gel or syrup. Keeping the dosage light at each stage lets you taste the supporting flavours clearly rather than letting bergamot dominate the whole dessert.
