Malic acid is the naturally occurring acid associated with fruits like apples and pears, and in food it is commonly used as an acidity regulator known as E296.

In practical terms it is a simple way to sharpen flavour without adding a lemon or vinegar note, so it is handy for balancing sweet recipes like fruit tarts, jams, sorbets and sour sweets, and for brightening savoury favourites like tomato sauces, vinaigrettes and marinades.
