Risotto Rice

Acquerello Aged Carnaroli Rice 2.5kg is a premium Italian rice known for its quality, flavour and performance in risotto. Grown and packed on the Colombara estate in the Piedmont region of Italy, this rice is aged for at least one year to improve its structure, flavour and ability to absorb liquids evenly.

Unlike standard carnaroli rice, Acquerello is carefully refined and then enriched with its germ, which is normally lost during processing. This gives the rice more nutrients and helps it stay firm while absorbing stock or sauce during cooking. The result is a creamy risotto with well-defined grains and a consistent texture.

This 2.5kg tin is ideal for regular cooking or entertaining and offers an excellent store cupboard solution for anyone who enjoys Italian food or experimenting with flavourful rice dishes at home.

Recipe Inspiration

  • Classic mushroom risotto: Cook slowly with onions, garlic, vegetable stock and mushrooms. Finish with butter and grated parmesan for a rich, satisfying dish.
  • Saffron risotto alla Milanese: Add saffron threads to hot stock and stir through cooked rice for a golden, fragrant side that pairs well with slow-cooked meats.
  • Pea and mint risotto: Stir fresh peas into the rice just before the end of cooking and finish with chopped mint and lemon zest for a light, springtime flavour.
  • Arancini: Use leftover risotto to shape and coat into balls, then deep fry until golden for a crispy snack or starter.

What makes Acquerello rice different from other carnaroli rice?

Acquerello rice is aged for at least one year which improves its cooking performance and flavour. It is also re-integrated with its germ, which boosts its nutritional content and helps the grains stay firm during cooking.

Can I use this rice for dishes other than risotto?

Yes. While it is ideal for risotto, Acquerello rice can also be used for arancini, rice salads and even rice pudding thanks to its ability to hold its shape and absorb flavour.

Does aged rice take longer to cook?

Aged rice may take a little longer to become tender compared to standard carnaroli rice, but it is less likely to break apart and gives a more consistent result in risotto.
