Calx is an additive that could be used to petrify or fossilise fruits and vegetables.
- The mineral calcium is obtained by calcimine pure limestone at temperatures of 900-1200 ° C.
- Once dissolved in water, you can immerse vegetables, causing the hardening of the walls of the plant.
- This allows it to maintain its outer shell during the cooking, forming a creamy texture inside.
- It is a hardening agent and/or acidity regulator (E-526).
